- 2 large eggs
- 2 tablespoons olive oil or melted butter
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and slice the zucchinis into thin rounds or sticks, about ½ inch thick.
- In a bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and pepper.
- Whisk the eggs and olive oil (or melted butter) together in another bowl.
- Dip each zucchini slice into the egg mixture, then coat with the breadcrumb mixture.
- Drizzle olive oil over the coated zucchini or spray with cooking spray.
- Bake for about 25 minutes, or until golden brown and crispy.
