Ingredients

  • 2 medium zucchinis
  • 1 cup breadcrumbs (panko recommended)
  • ¾ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons olive oil or melted butter

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and slice the zucchinis into thin rounds or sticks, about ½ inch thick.
  3. In a bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and pepper.
  4. Whisk the eggs and olive oil (or melted butter) together in another bowl.
  5. Dip each zucchini slice into the egg mixture, then coat with the breadcrumb mixture.
  6. Drizzle olive oil over the coated zucchini or spray with cooking spray.
