Ingredients

  • Fresh sea scallops, about 1 pound
  • Olive oil, for drizzling
  • Salt, to taste
  • Black pepper, to taste
  • Panko breadcrumbs, 1 cup
  • Grated Parmesan cheese, ½ cup (or nutritional yeast for a vegan option)
  • Minced garlic, 2 cloves
  • Fresh parsley, chopped, for garnish
  • Lemon wedges, for serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the scallops under cold water and pat them dry with paper towels.
  3. Combine the panko breadcrumbs, grated Parmesan cheese, minced garlic, and a pinch of salt and pepper in a mixing bowl.
  4. Arrange the scallops on a lightly greased baking sheet and drizzle with olive oil.
  5. Sprinkle the breadcrumb mixture generously on each scallop, pressing lightly to adhere.
  6. Bake in the preheated oven for about 12 to 15 minutes until golden brown and opaque.
