Ingredients
- Fresh sea scallops, about 1 pound

- Panko breadcrumbs, 1 cup
- Grated Parmesan cheese, ½ cup (or nutritional yeast for a vegan option)
- Minced garlic, 2 cloves
- Fresh parsley, chopped, for garnish
- Lemon wedges, for serving
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the scallops under cold water and pat them dry with paper towels.
- Combine the panko breadcrumbs, grated Parmesan cheese, minced garlic, and a pinch of salt and pepper in a mixing bowl.
- Arrange the scallops on a lightly greased baking sheet and drizzle with olive oil.
- Sprinkle the breadcrumb mixture generously on each scallop, pressing lightly to adhere.
- Bake in the preheated oven for about 12 to 15 minutes until golden brown and opaque.
- Garnish with chopped parsley and serve with lemon wedges.
