Tender BBQ chicken wrapped with crispy bacon, cheddar cheese, and fresh coleslaw in a golden tortilla. Perfect for quick weeknight dinners or meal prep!
Ingredients
Scale
- 1.5 pounds boneless, skinless chicken breasts
- 1 cup BBQ sauce (divided)
- 6 large flour tortillas
- 2 cups shredded cheddar cheese
- 2 cups coleslaw mix
- 1/2 cup ranch dressing
- 1/2 cup red onion, thinly sliced
- 6 strips crispy bacon, crumbled
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
Instructions
- 1. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with garlic powder, smoked paprika, salt, and pepper.
- 2. Cook chicken for 6-7 minutes per side until golden brown and internal temperature reaches 165°F. Let rest for 5 minutes.
- 3. Slice chicken into thin strips and toss with 1/2 cup BBQ sauce until well coated.
- 4. Warm tortillas slightly to make them more pliable. Spread ranch dressing across the center of each tortilla.
- 5. Layer BBQ chicken strips down the middle, then add shredded cheddar cheese, coleslaw mix, red onion slices, and crumbled bacon.
- 6. Fold in the sides of the tortilla, then roll tightly from bottom to top.
- 7. For extra crispiness, toast assembled wraps in a clean skillet for 2 minutes per side until golden and cheese melts.
- 8. Cut in half diagonally and serve immediately with extra BBQ sauce on the side.
Notes
Store components separately in airtight containers for up to 4 days. Assemble just before eating to maintain crispiness. Can substitute rotisserie chicken for quicker prep. Wraps freeze well for up to 3 months when wrapped tightly.
