- 14 ounces kielbasa sausage, sliced
- 2 pounds russet potatoes, diced
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1 medium onion, diced
- 1/2 cup chicken broth
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 tablespoons fresh parsley, chopped
Instructions
- 1. Spray the inside of your crockpot with cooking spray to prevent sticking.
- 2. Place diced potatoes in the bottom of the crockpot in an even layer.
- 3. Add sliced kielbasa and diced onions over the potatoes.
- 4. In a mixing bowl, combine cream of mushroom soup, sour cream, 1 cup of cheddar cheese, chicken broth, garlic powder, black pepper, and paprika. Whisk until smooth.
- 5. Pour the cheese sauce mixture over the potatoes and kielbasa, stirring gently to distribute evenly.
- 6. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are fork-tender.
- 7. During the last 30 minutes of cooking, sprinkle the remaining 1 cup of cheddar cheese over the top.
- 8. Allow cheese to melt completely, then garnish with fresh parsley before serving.
- 9. Let rest for 10 minutes before serving to allow sauce to thicken slightly.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. Can be frozen for up to 2 months. Add a splash of milk when reheating to restore creaminess. Serve with crusty bread or a simple green salad for a complete meal.
