Easy and delicious oven-baked chicken taquitos with a crispy golden exterior, melty cheese, and tender shredded chicken, perfect for snacks, dinners, or parties.

- 2 cups shredded cooked chicken
- ½ cup shredded cheddar or Monterey Jack cheese
- 2 tablespoons finely chopped onion
- 1 teaspoon cumin
- ½ teaspoon paprika
- Pinch of salt
- 6–8 small flour or corn tortillas
- Vegetable oil or cooking spray
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Mix chicken, cheese, onion, cumin, paprika, and salt.
- Warm tortillas, then spoon filling and roll tightly. Place seam-side down on baking sheet.
- Lightly brush or spray with oil. Bake 15–20 minutes, turning halfway, until golden and crispy.
- Serve warm with salsa, guacamole, or sour cream.
Notes
Taquitos can be made ahead and refrigerated or frozen for later.
