Ingredients

  • 8 ounces dark chocolate, chopped
  • ½ cup unsalted butter
  • 1 cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • ¼ cup cocoa powder, unsweetened
  • ½ teaspoon salt
  • 1 cup rhubarb, chopped
  • Optional: ½ cup chopped nuts or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Chop rhubarb and melt chocolate with butter.
  2. Whisk eggs and sugar until thick. Fold in vanilla, melted chocolate, then flour, cocoa, and salt. Fold in rhubarb and optional add-ins.
  3. Pour into parchment-lined 8×8-inch pan. Bake 25–30 minutes until toothpick comes out with moist crumbs. Cool completely before slicing.
