- 8 ounces dark chocolate, chopped
- ½ cup unsalted butter
- 1 cup brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ¾ cup all-purpose flour
- ¼ cup cocoa powder, unsweetened
- ½ teaspoon salt
- 1 cup rhubarb, chopped
- Optional: ½ cup chopped nuts or chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Chop rhubarb and melt chocolate with butter.
- Whisk eggs and sugar until thick. Fold in vanilla, melted chocolate, then flour, cocoa, and salt. Fold in rhubarb and optional add-ins.
- Pour into parchment-lined 8×8-inch pan. Bake 25–30 minutes until toothpick comes out with moist crumbs. Cool completely before slicing.
