- 1 cup dill pickles, chopped
- 3/4 cup mayonnaise (light or regular)
- 1/2 cup sour cream
- 1 tbsp Dijon mustard
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely diced
- 1/2 cup shredded carrots
- 2 tbsp fresh dill, chopped
- 2 tbsp pickle juice (optional, for extra tang)
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp freshly ground black pepper
Instructions
- Cook pasta al dente, drain, and rinse under cold water. Chop pickles, celery, onion, carrots, and dill.
- In a large bowl, whisk together mayonnaise, sour cream, Dijon mustard, and optional pickle juice. Fold in pasta and chopped vegetables. Season with salt and pepper.
