Ingredients

  • 12 oz elbow pasta (cooked al dente)
  • 1 cup dill pickles, chopped
  • 3/4 cup mayonnaise (light or regular)
  • 1/2 cup sour cream
  • 1 tbsp Dijon mustard
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely diced
  • 1/2 cup shredded carrots
  • 2 tbsp fresh dill, chopped
  • 2 tbsp pickle juice (optional, for extra tang)
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp freshly ground black pepper

Instructions

  1. Cook pasta al dente, drain, and rinse under cold water. Chop pickles, celery, onion, carrots, and dill.
  2. In a large bowl, whisk together mayonnaise, sour cream, Dijon mustard, and optional pickle juice. Fold in pasta and chopped vegetables. Season with salt and pepper.
