Description

A comforting, one-pan chicken tzatziki rice bake featuring tender chicken, fluffy rice, and creamy lemon-garlic tzatziki sauce. Quick to assemble, perfect for weeknight dinners, and easy enough for beginners.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • 1 medium cucumber, grated and squeezed
  • 1 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • Juice of 1 lemon
  • 2 tbsp fresh dill or parsley, chopped
  • Optional: 1 medium zucchini, grated

Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
  2. Toss chicken with olive oil, lemon juice, and seasonings.
  3. Spread rice evenly in the baking dish, add chicken and optional veggies, then pour in chicken broth. Cover with foil.
  4. Bake for 35–40 minutes covered. Remove foil and bake 10 more minutes to brown chicken.
  5. Meanwhile, prepare tzatziki: mix Greek yogurt, cucumber, garlic, lemon juice, dill, salt, and pepper. Chill briefly.
  6. Serve chicken and rice hot, drizzled with tzatziki and garnished with fresh herbs.

Tips: Cut chicken evenly, drain cucumber, and allow bake to rest 5–10 minutes before serving.
