- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tbsp olive oil
- 1 medium cucumber, grated and squeezed
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp oregano
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and pepper to taste
- Juice of 1 lemon
- 2 tbsp fresh dill or parsley, chopped
- Optional: 1 medium zucchini, grated
Instructions
- Preheat oven to 375°F and grease a 9×13-inch baking dish.
- Toss chicken with olive oil, lemon juice, and seasonings.
- Spread rice evenly in the baking dish, add chicken and optional veggies, then pour in chicken broth. Cover with foil.
- Bake for 35–40 minutes covered. Remove foil and bake 10 more minutes to brown chicken.
- Meanwhile, prepare tzatziki: mix Greek yogurt, cucumber, garlic, lemon juice, dill, salt, and pepper. Chill briefly.
- Serve chicken and rice hot, drizzled with tzatziki and garnished with fresh herbs.
Tips: Cut chicken evenly, drain cucumber, and allow bake to rest 5–10 minutes before serving.
