Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1 3/4 cups milk
  • 2 large eggs
  • 3 tablespoons melted butter
  • 1/4 cup pure maple syrup plus extra for drizzling
  • 8 breakfast sausage patties
  • 8 slices American cheese
  • 8 large eggs for sandwich filling
  • Cooking spray as needed

Instructions

  1. 1. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  2. 2. In a separate bowl, combine milk, 2 eggs, melted butter, and 1/4 cup maple syrup.
  3. 3. Pour wet ingredients into dry ingredients and mix until just combined. Don’t overmix.
  4. 4. Heat griddle to medium heat and spray with cooking spray.

  6. 6. Pour 1/3 cup batter over each syrup pattern and cook until bubbles form, about 2-3 minutes.
  7. 7. Flip pancakes and cook another 2 minutes until golden brown. Repeat to make 16 pancakes.
  8. 8. Cook sausage patties according to package directions until fully cooked.
  9. 9. Cook remaining 8 eggs to your preference, seasoned with salt and pepper.
  10. 10. To assemble, place one pancake maple-side up, add cheese slice, sausage patty, cooked egg, and top with another pancake maple-side down.
  11. 11. Press gently and serve immediately while warm.

Notes

Store assembled sandwiches wrapped in plastic wrap in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat in microwave for 60-90 seconds if refrigerated, or 2-3 minutes if frozen. For best texture, reheat in oven at 350°F.
