  • 14 ounces kielbasa sausage, sliced
  • 1.5 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 1 large bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. 1. Heat olive oil in a large skillet over medium-high heat until shimmering.
  2. 2. Add halved baby potatoes cut-side down and cook undisturbed for 5-6 minutes until golden brown.
  3. 3. Flip potatoes and add sliced kielbasa to the skillet, cooking for 4-5 minutes until sausage is browned.
  4. 4. Add diced onion and chopped bell pepper, stirring occasionally, and cook for 5 minutes until softened.
  5. 5. Stir in minced garlic, paprika, dried thyme, salt, and black pepper, cooking for 1-2 minutes until fragrant.
  6. 6. Continue cooking, stirring occasionally, until potatoes are fork-tender and everything is heated through, about 5 more minutes.
  7. 7. Remove from heat and garnish with fresh chopped parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet over medium heat for best texture. This dish can be customized with additional vegetables like green beans, mushrooms, or zucchini. For a spicier version, add red pepper flakes or diced jalapeños.
