- 1.5 pounds baby potatoes, halved
- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 1 large bell pepper, chopped
- 3 cloves garlic, minced

- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- 1. Heat olive oil in a large skillet over medium-high heat until shimmering.
- 2. Add halved baby potatoes cut-side down and cook undisturbed for 5-6 minutes until golden brown.
- 3. Flip potatoes and add sliced kielbasa to the skillet, cooking for 4-5 minutes until sausage is browned.
- 4. Add diced onion and chopped bell pepper, stirring occasionally, and cook for 5 minutes until softened.
- 5. Stir in minced garlic, paprika, dried thyme, salt, and black pepper, cooking for 1-2 minutes until fragrant.
- 6. Continue cooking, stirring occasionally, until potatoes are fork-tender and everything is heated through, about 5 more minutes.
- 7. Remove from heat and garnish with fresh chopped parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet over medium heat for best texture. This dish can be customized with additional vegetables like green beans, mushrooms, or zucchini. For a spicier version, add red pepper flakes or diced jalapeños.
