Description

Easy Pancake Poppers are fluffy, bite-size baked pancakes made with simple pantry ingredients. They cook fast, taste cozy, and make the perfect kid-friendly breakfast or snack.


Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

2 teaspoons baking powder

1/4 teaspoon salt

3/4 cup milk

1 large egg

2 tablespoons melted butter or vegetable oil

1 teaspoon vanilla extract

1/2 cup optional mix-ins (blueberries, mini chocolate chips)


Instructions

  1. Preheat oven to 375°F. Grease a mini muffin pan to prevent sticking.
  2. Whisk the flour, sugar, baking powder, and salt in a medium bowl.
  3. Pour in the milk, egg, melted butter, and vanilla. Whisk gently until smooth.
  4. Scoop the batter into each muffin cup, filling about two-thirds full. Add optional mix-ins.
  5. Bake for 10–12 minutes or until the poppers are golden and puffed.
  6. Serve warm with maple syrup, fresh fruit, or yogurt for dipping.

Notes

Store leftovers in an airtight container for up to 3 days.
