2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
1 large egg
2 tablespoons melted butter or vegetable oil
1 teaspoon vanilla extract
1/2 cup optional mix-ins (blueberries, mini chocolate chips)
Instructions
- Preheat oven to 375°F. Grease a mini muffin pan to prevent sticking.
- Whisk the flour, sugar, baking powder, and salt in a medium bowl.
- Pour in the milk, egg, melted butter, and vanilla. Whisk gently until smooth.
- Scoop the batter into each muffin cup, filling about two-thirds full. Add optional mix-ins.
- Bake for 10–12 minutes or until the poppers are golden and puffed.
- Serve warm with maple syrup, fresh fruit, or yogurt for dipping.
Notes
Store leftovers in an airtight container for up to 3 days.
