- 1 lb ground beef or turkey
- 1 medium onion, diced
- 2 medium carrots, diced
- 1 cup peas, frozen
- 1 cup corn, frozen or canned
- 2 cloves garlic, minced
- 1 cup beef or chicken broth, low sodium
- 2 tbsp tomato paste (optional)
- 1 tsp Worcestershire sauce
- Salt & pepper to taste
- 3 cups mashed potatoes, prepared or homemade
- 2 tbsp butter
- 1/4 cup milk
Instructions
- Cook ground beef or turkey until browned. Add onions, carrots, garlic, peas, and corn, cooking until softened. Stir in broth, tomato paste, Worcestershire sauce, salt, and pepper. Simmer 5-7 minutes.
- Preheat oven to 375°F (190°C). Spread meat-vegetable mixture in a 9×13-inch dish. Top with mashed potatoes, smoothing with a spatula and dotting with butter.
- Bake uncovered 20-25 minutes until potatoes are golden and edges bubble. Let cool slightly before serving.
