- 8 large egg whites
- 1 tbsp olive oil or butter
- 1 cup chopped spinach
- 1/2 cup diced bell peppers
- 1/2 cup cherry tomatoes, halved
- 1/4 cup shredded cheese (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder (optional)
Instructions
- Preheat oven to 375°F. Sauté vegetables in olive oil or butter in an oven-safe skillet for 3–4 minutes.
- Whisk egg whites and pour over vegetables. Add cheese and seasonings. Cook 2–3 minutes until edges start to set.
- Transfer skillet to oven and bake 8–10 minutes until center is set. Garnish with fresh herbs and serve warm.

- Add herbs, lean meats, or additional vegetables to customize your frittata. Fat-free cheese can make it lighter.
