Description

Ingredients

  • 8 large egg whites
  • 1 tbsp olive oil or butter
  • 1 cup chopped spinach
  • 1/2 cup diced bell peppers
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup shredded cheese (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder (optional)

Instructions

  1. Preheat oven to 375°F. Sauté vegetables in olive oil or butter in an oven-safe skillet for 3–4 minutes.
  2. Whisk egg whites and pour over vegetables. Add cheese and seasonings. Cook 2–3 minutes until edges start to set.
  3. Transfer skillet to oven and bake 8–10 minutes until center is set. Garnish with fresh herbs and serve warm.
