Ingredients

  • lb boneless skinless chicken breasts, cubed
  • 1½ cups orzo pasta
  • 3 large yellow onions, sliced
  • 3½ cups low-sodium chicken broth
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 1½ cups shredded mozzarella cheese
  • ½ cup shredded provolone cheese

Instructions

  • Melt butter and olive oil in a skillet over medium heat. Add onions and cook until golden and soft.
  • Season chicken and brown lightly in the same skillet.
  • Add garlic, orzo, and broth. Simmer until orzo is tender and saucy.
