- 1½ lb boneless skinless chicken breasts, cubed
- 1½ cups orzo pasta
- 3 large yellow onions, sliced
- 3½ cups low-sodium chicken broth
- 3 tbsp butter
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
- 1½ cups shredded mozzarella cheese
- ½ cup shredded provolone cheese
Instructions
- Melt butter and olive oil in a skillet over medium heat. Add onions and cook until golden and soft.
- Season chicken and brown lightly in the same skillet.
- Add garlic, orzo, and broth. Simmer until orzo is tender and saucy.
- Transfer to baking dish, top with cheeses, and bake at 375°F for 20 minutes until bubbly.
- Rest briefly before serving.
