Tender, fork-ready beef simmered in rich caramelized onions and savory broth. This Ultimate French Onion Pot Roast is perfect for cozy dinners or family meals, full of flavor without complicated ingredients.


Ingredients

  • Beef chuck roast: 3–4 lbs, well-marbled for tenderness
  • Olive oil: 2 tbsp, for searing
  • Butter: 2 tbsp, for caramelizing onions
  • Yellow onions: 4 large, sliced thick
  • Garlic: 4 cloves, minced
  • Beef broth: 3 cups, low-sodium preferred
  • Apple cider or sparkling grape juice: 1 cup, alcohol-free alternative to wine
  • Worcestershire sauce: 2 tbsp, adds depth
  • Fresh thyme: 2 tsp, or 2–3 sprigs
  • Fresh rosemary: 1 tsp, or 1 sprig
  • Bay leaves: 2, optional
  • Salt: 1 tsp, adjust to taste
  • Black pepper: ½ tsp, freshly ground

Instructions

  1. Pat roast dry and sear in olive oil until all sides are browned. Remove from pot.
  2. Melt butter, then add sliced onions and cook slowly until golden and caramelized. Add garlic briefly.
  3. Stir in beef broth, apple cider (or grape juice), Worcestershire sauce, thyme, rosemary, and bay leaves. Return roast to pot.
  4. Simmer on stovetop or bake at 300°F in oven for 3–4 hours until meat is fork-tender. Slow cooker: 8 hours on low.
  5. Remove roast and let rest. Optionally thicken sauce with cornstarch slurry. Serve with mashed potatoes, noodles, or vegetables.
