Instructions
- Cook shrimp until pink and set aside.
- Slice cucumbers, bell peppers, and onion. Combine in a bowl.
- Whisk olive oil, lemon juice, garlic, salt, and pepper for dressing.
- Toss shrimp and vegetables with dressing. Garnish with parsley or mint. Serve chilled.
