- 4 large ripe bananas
- 1/2 cup natural peanut butter
- 1 1/2 cups dark chocolate chips
- 2 tablespoons coconut oil
- 1/2 cup roasted peanuts, chopped
- 1/4 teaspoon sea salt
- 1 tablespoon honey or maple syrup (optional)
Instructions
- 1. Peel bananas and slice into 1-inch rounds. Line a baking sheet with parchment paper.
- 2. Arrange half of the banana slices on the prepared sheet. Spread 1 teaspoon peanut butter on each slice.
- 3. Top with remaining banana slices to create sandwiches. Press gently to secure.
- 4. Freeze the banana sandwiches for at least 2 hours until completely frozen solid.
- 5. Combine chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until smooth and glossy.
- 6. Remove frozen banana pieces from freezer. Working quickly, dip each piece into melted chocolate using a fork.
- 7. Allow excess chocolate to drip back into bowl, then place on parchment-lined sheet.
- 8. Immediately sprinkle with chopped peanuts and a pinch of sea salt before chocolate sets.
- 9. Return to freezer for 30 minutes until chocolate is completely hardened.
- 10. Transfer to an airtight container with parchment paper between layers. Store in freezer for up to 3 months.
