Description

Individual sugar cookies topped with sweet cream cheese frosting and fresh fruit. Perfect for parties, these colorful treats combine cookie, frosting, and fresh fruit in every bite.


Ingredients

  • All-purpose flour – 2 ¾ cups
  • Baking soda – 1 teaspoon
  • Salt – ½ teaspoon
  • Unsalted butter, softened – 1 cup
  • Granulated sugar – 1 ½ cups
  • Large eggs – 2
  • Vanilla extract – 2 teaspoons
  • Cream cheese, softened – 8 ounces
  • Powdered sugar – 1 cup
  • Strawberries, sliced – 1 cup
  • Blueberries – ½ cup
  • Kiwi, peeled and sliced – 2
  • Mandarin oranges – ½ cup
  • Apricot preserves, optional – ¼ cup

Instructions

  1. 1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. 2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. 3. In a large bowl, beat softened butter and granulated sugar until light and fluffy, about 3 minutes.
  4. 4. Add eggs and vanilla extract to butter mixture, beating until well combined.
  5. 5. Gradually mix dry ingredients into wet ingredients until just combined, being careful not to overmix.
  6. 6. Using a large cookie scoop, place dough balls 3 inches apart on prepared baking sheets.
  7. 7. Bake for 10-12 minutes until edges are lightly golden, then cool on pan for 5 minutes before transferring to wire rack.
  8. 8. While cookies cool, prepare frosting by beating cream cheese until smooth and fluffy.
  9. 9. Add powdered sugar to cream cheese and beat until well combined and spreadable.
  10. 10. Once cookies are completely cool, spread a generous layer of cream cheese frosting on each cookie, leaving a small border.
  11. 11. Arrange sliced strawberries, blueberries, kiwi, and mandarin oranges in decorative patterns on frosted cookies.
  12. 12. Optional: brush fruit with warmed apricot preserves for a glossy finish.
  13. 13. Refrigerate assembled cookies for 30 minutes before serving to set the frosting.
