- 4 cups shredded potatoes (frozen or fresh)
- 1 can (10.5 oz) cream of chicken soup (or cream of mushroom)
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1/4 cup butter, melted
- 1 1/2 cups crispy fried onions
- 1 tsp salt
- 1/2 tsp black pepper
- Optional: diced onions, bell peppers, cooked turkey
Instructions
- Preheat oven to 350°F (175°C). Mix shredded potatoes, cream of chicken soup, sour cream, and optional mix-ins.
- Fold in cheddar cheese, season with salt and pepper. Transfer mixture to greased 9×13-inch baking dish.
- Top with crispy fried onions mixed with melted butter. Bake 25–30 minutes until bubbly and golden. Cool slightly before serving.
