- 1 lb (450 g) chicken breasts or thighs, boneless, skinless
- 2 medium zucchini, sliced into half-moons
- 1 cup corn kernels, fresh or frozen
- 3 tablespoons unsalted butter (or olive oil for dairy-free)
- 4 cloves garlic, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon paprika (optional)
- 2 tablespoons fresh parsley, chopped, for garnish
Instructions
- Pat chicken dry, season with salt, pepper, and paprika. Prepare zucchini, corn, and garlic.
- Melt butter in a skillet over medium heat. Cook garlic until fragrant, then sear chicken 4–5 minutes per side.
- Push chicken aside, add zucchini and corn, sauté 3–4 minutes. Mix together to coat with garlic butter.
- Garnish with parsley and serve immediately with rice, pasta, or salad.

- Store in an airtight container in the refrigerator for up to 3–4 days.
