Description

Ingredients

  • 1 lb (450 g) chicken breasts or thighs, boneless, skinless
  • 2 medium zucchini, sliced into half-moons
  • 1 cup corn kernels, fresh or frozen
  • 3 tablespoons unsalted butter (or olive oil for dairy-free)
  • 4 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • 2 tablespoons fresh parsley, chopped, for garnish

Instructions

  1. Pat chicken dry, season with salt, pepper, and paprika. Prepare zucchini, corn, and garlic.
  2. Melt butter in a skillet over medium heat. Cook garlic until fragrant, then sear chicken 4–5 minutes per side.
  3. Push chicken aside, add zucchini and corn, sauté 3–4 minutes. Mix together to coat with garlic butter.
  4. Garnish with parsley and serve immediately with rice, pasta, or salad.
