- 1 lb steak (sirloin, ribeye, or preferred cut), cut into 1-inch bites
- 1 lb baby potatoes or Yukon gold, halved
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon fresh parsley or rosemary, chopped
- 1 teaspoon paprika (optional)
- 1/4 teaspoon chili flakes (optional)
- 1 teaspoon lemon juice (optional)
- Salt and pepper, to taste
Instructions
- Pat potatoes dry and toss with olive oil, salt, and pepper. Sear in a skillet over medium-high heat until golden and crisp, about 10–12 minutes.
- Push potatoes aside, melt butter, and sauté garlic until fragrant. Add herbs and optional spices.
- Add steak bites, sear 2–3 minutes per side, then toss with potatoes and garlic butter. Finish with lemon juice if desired and serve immediately.
