Ingredients

  • 2 cups fresh spinach

  • 1 tablespoon soy sauce (or coconut aminos)
  • Salt and pepper to taste
  • Optional: red pepper flakes for a kick
  • Optional: lemon wedges for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about a minute.
  2. Add the chicken pieces, seasoning them with salt and pepper. Cook for about 5-7 minutes until browned and cooked through.
  3. Add the broccoli florets to the skillet, stirring until they turn bright green, about 3 minutes.
  4. Add the fresh spinach and soy sauce, tossing together until the spinach wilts, about 2-3 minutes.
  5. Taste and adjust seasonings as needed, adding red pepper flakes if desired.
  6. Remove from heat, serve immediately, and drizzle with lemon juice if desired.

For a vegetarian option, substitute chicken with tofu or chickpeas. For a low-carb dish, use cauliflower florets.
