- 3 cups broccoli florets, fresh or frozen
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon soy sauce (or coconut aminos)
- Salt and pepper to taste
- Optional: red pepper flakes for a kick
- Optional: lemon wedges for serving
Instructions
- Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about a minute.
- Add the chicken pieces, seasoning them with salt and pepper. Cook for about 5-7 minutes until browned and cooked through.
- Add the broccoli florets to the skillet, stirring until they turn bright green, about 3 minutes.
- Add the fresh spinach and soy sauce, tossing together until the spinach wilts, about 2-3 minutes.
- Taste and adjust seasonings as needed, adding red pepper flakes if desired.
- Remove from heat, serve immediately, and drizzle with lemon juice if desired.
Notes
For a vegetarian option, substitute chicken with tofu or chickpeas. For a low-carb dish, use cauliflower florets.
