Garlic Parmesan Chicken and Potatoes

Description

A delicious one-pan dinner featuring tender chicken and crispy potatoes coated in a savory garlic parmesan mixture that the whole family will love.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 6 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1/3 cup olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons butter, melted

Instructions

  1. 1. Preheat oven to 425°F and line a large baking sheet with parchment paper.
  2. 2. In a bowl, combine minced garlic, parmesan cheese, olive oil, melted butter, Italian seasoning, paprika, salt, and pepper.
  3. 3. Toss halved potatoes with half of the garlic parmesan mixture and arrange cut-side down on the baking sheet.
  4. 4. Roast potatoes for 15 minutes.
  5. 5. Pat chicken breasts dry and coat with remaining garlic parmesan mixture.
  6. 6. Remove pan from oven and nestle chicken pieces among the potatoes.
  7. 7. Return to oven and roast for 20-25 minutes until chicken reaches 165°F internal temperature.
  8. 8. If desired, broil for 2 minutes to crisp everything up.
  9. 9. Garnish with fresh parsley and serve immediately.

Notes

Store leftovers in airtight containers in the refrigerator for up to 4 days. Reheat in a 350°F oven for best results. Can be frozen for up to 3 months. For extra crispy potatoes, parboil them for 5 minutes before roasting.
