A delicious one-pan dinner featuring tender chicken and crispy potatoes coated in a savory garlic parmesan mixture that the whole family will love.

- 2 pounds boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 6 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1/3 cup olive oil
- 2 teaspoons Italian seasoning
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- 2 tablespoons butter, melted
Instructions
- 1. Preheat oven to 425°F and line a large baking sheet with parchment paper.
- 2. In a bowl, combine minced garlic, parmesan cheese, olive oil, melted butter, Italian seasoning, paprika, salt, and pepper.
- 3. Toss halved potatoes with half of the garlic parmesan mixture and arrange cut-side down on the baking sheet.
- 4. Roast potatoes for 15 minutes.
- 5. Pat chicken breasts dry and coat with remaining garlic parmesan mixture.
- 6. Remove pan from oven and nestle chicken pieces among the potatoes.
- 7. Return to oven and roast for 20-25 minutes until chicken reaches 165°F internal temperature.
- 8. If desired, broil for 2 minutes to crisp everything up.
- 9. Garnish with fresh parsley and serve immediately.
Notes
Store leftovers in airtight containers in the refrigerator for up to 4 days. Reheat in a 350°F oven for best results. Can be frozen for up to 3 months. For extra crispy potatoes, parboil them for 5 minutes before roasting.
