Ingredients
- Boneless, skinless chicken breasts – 2 pounds
- Fresh garlic cloves, minced – 6 cloves
- Grated Parmesan cheese – 1 cup
- Olive oil – 1/4 cup
- Fresh lemon juice – 2 tablespoons
- Italian seasoning – 2 teaspoons
- Salt – 1 teaspoon
- Black pepper – 1/2 teaspoon
- Fresh parsley, chopped – 1/4 cup
- Butter, melted – 2 tablespoons
- Wooden or metal skewers – 8-10 skewers
Instructions
- 1. Soak wooden skewers in water for 30 minutes if using. Cut chicken breasts into 1.5-inch uniform cubes.
- 2. In a large bowl, combine olive oil, lemon juice, minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper. Whisk until well combined.
- 3. Add chicken cubes to the marinade, tossing to coat evenly. Cover and refrigerate for at least 30 minutes, up to 2 hours.
- 4. Thread 5-6 chicken pieces onto each skewer, leaving small gaps between pieces for even cooking.
- 5. Preheat grill to medium-high heat (375-400°F) or oven to 425°F.
- 6. For grilling: Cook skewers for 5-6 minutes per side until internal temperature reaches 165°F. For baking: Place on lined baking sheet and bake for 18-20 minutes, flipping halfway through.
- 7. Mix melted butter with a pinch of garlic powder and Parmesan, then brush over cooked skewers.
- 8. Garnish with fresh chopped parsley and serve immediately with your favorite sides.
Notes
Store leftover chicken in an airtight container in the refrigerator for up to 4 days. Reheat gently in a 350°F oven for 10 minutes. Can be frozen for up to 3 months. These skewers pair wonderfully with roasted vegetables, Caesar salad, or garlic bread. For extra flavor, marinate overnight.
