2 cups gluten-free flour blend (with xanthan gum)
1 ½ cups grated carrots
¾ cup brown sugar
½ cup white sugar
3 large eggs
¾ cup vegetable oil or applesauce
1 tsp cinnamon
½ tsp nutmeg
½ tsp baking soda
1 tsp vanilla extract
½ cup crushed pineapple (optional)
½ cup chopped nuts (optional)
Instructions
Preheat oven to 350°F (175°C). Grease a baking pan.
In one bowl, mix dry ingredients. In another, whisk wet ingredients.
Combine, then fold in carrots, pineapple, and nuts.
Pour batter into pan. Bake for 30–35 mins or until toothpick comes out clean.
Cool before frosting.
