A flavorful and easy Greek Meatball Bowl featuring tender herb-seasoned meatballs, fresh Mediterranean vegetables, grains, and creamy Greek yogurt sauce. Perfect for weeknight dinners, meal prep, or family meals.
Ingredients
- Ground beef or turkey – 1 lb
- Egg – 1 large
- Breadcrumbs – 1/2 cup
- Grated onion – 1/4 cup
- Garlic, minced – 2 cloves
- Fresh parsley, chopped – 1/4 cup
- Fresh mint, chopped – 1 tbsp
- Dried oregano – 1 tsp
- Salt – 1 tsp
- Black pepper – 1/2 tsp
- Olive oil – 1–2 tbsp
- Cooked rice, quinoa, or couscous – 2 cups
- Romaine or mixed greens – 2 cups
- Cherry tomatoes – 1 cup
- Cucumber – 1 cup
- Red onion – 1/4 cup
- Kalamata olives – 1/4 cup
- Feta cheese – 1/2 cup
- Greek yogurt – 1 cup
- Lemon juice – 1 tbsp
- Garlic powder – 1/2 tsp
- Salt – Pinch
- Water – as needed
- Optional: Roasted chickpeas, turkey or beef bacon, fresh dill
Instructions
- Mix meatball ingredients and shape into small balls. Cook in olive oil until golden and cooked through.
- Prepare bowl base with grains and greens.
- Add cooked meatballs on top. Arrange fresh veggies, feta, and optional toppings.
- Whisk yogurt sauce with lemon, garlic powder, and water; drizzle over bowl. Serve immediately.
