Description

 A flavorful and easy Greek Meatball Bowl featuring tender herb-seasoned meatballs, fresh Mediterranean vegetables, grains, and creamy Greek yogurt sauce. Perfect for weeknight dinners, meal prep, or family meals.


Ingredients

  • Ground beef or turkey – 1 lb
  • Egg – 1 large
  • Breadcrumbs – 1/2 cup
  • Grated onion – 1/4 cup
  • Garlic, minced – 2 cloves
  • Fresh parsley, chopped – 1/4 cup
  • Fresh mint, chopped – 1 tbsp
  • Dried oregano – 1 tsp
  • Salt – 1 tsp
  • Black pepper – 1/2 tsp
  • Olive oil – 1–2 tbsp
  • Cooked rice, quinoa, or couscous – 2 cups
  • Romaine or mixed greens – 2 cups
  • Cherry tomatoes – 1 cup
  • Cucumber – 1 cup
  • Red onion – 1/4 cup
  • Kalamata olives – 1/4 cup
  • Feta cheese – 1/2 cup
  • Greek yogurt – 1 cup
  • Lemon juice – 1 tbsp
  • Garlic powder – 1/2 tsp
  • Salt – Pinch
  • Water – as needed
  • Optional: Roasted chickpeas, turkey or beef bacon, fresh dill

Instructions

  1. Mix meatball ingredients and shape into small balls. Cook in olive oil until golden and cooked through.
  2. Prepare bowl base with grains and greens.
  3. Add cooked meatballs on top. Arrange fresh veggies, feta, and optional toppings.
  4. Whisk yogurt sauce with lemon, garlic powder, and water; drizzle over bowl. Serve immediately.

Notes

 Store ingredients separately for meal prep. Reheat meatballs and grains before assembling.
