Ingredients

  • 4 large spinach or plain tortillas
  • 1/2 cup cream cheese or hummus
  • 1/2 cup crumbled feta cheese
  • 1/2 cup cucumbers, thinly sliced
  • 1/2 cup tomatoes, diced
  • 1/4 cup red bell peppers, thinly sliced (optional)
  • 1/4 cup Kalamata olives, sliced
  • 1 tablespoon fresh parsley or oregano (optional)
  • 1 teaspoon lemon juice (optional)
  • 1 teaspoon olive oil (optional)

Instructions

  1. Spread cream cheese or hummus evenly over tortillas, leaving a small edge clear. Layer cucumbers, tomatoes, bell peppers, olives, feta, and optional herbs evenly on top.
  2. Roll tortillas tightly and wrap in plastic. Chill for at least 30 minutes to set the shape.
