- 4 large spinach or plain tortillas
- 1/2 cup cream cheese or hummus
- 1/2 cup crumbled feta cheese
- 1/2 cup cucumbers, thinly sliced
- 1/2 cup tomatoes, diced
- 1/4 cup red bell peppers, thinly sliced (optional)
- 1/4 cup Kalamata olives, sliced
- 1 tablespoon fresh parsley or oregano (optional)
- 1 teaspoon lemon juice (optional)
- 1 teaspoon olive oil (optional)
Instructions
- Spread cream cheese or hummus evenly over tortillas, leaving a small edge clear. Layer cucumbers, tomatoes, bell peppers, olives, feta, and optional herbs evenly on top.
- Roll tortillas tightly and wrap in plastic. Chill for at least 30 minutes to set the shape.
- Slice into 1-inch pinwheels and arrange on a serving platter. Drizzle olive oil or sprinkle parsley if desired. Serve fresh.
