- 2 boneless chicken breasts (12 oz total)
- 6 cups romaine or mixed greens
- 1 cup cherry tomatoes
- 1 large avocado, sliced
- ¼ cup red onion, sliced
- 3 tablespoons olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- 1 tablespoon lemon juice
- Salt & black pepper to taste
Instructions
- Pat chicken dry, brush with olive oil, season, and grill 5–6 minutes per side. Let rest before slicing.
- Assemble salad with greens, tomatoes, avocado, and red onion.
- Slice chicken, place on salad, and drizzle with honey Dijon dressing. Serve immediately.
