Description

A quick and delicious skillet dish featuring ground turkey and fresh zucchini, perfect for a nutritious weeknight dinner.


Ingredients

  • 1 pound ground turkey
  • 2 medium zucchinis, diced
  • 1 bell pepper, chopped (any color)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ½ teaspoon red pepper flakes
  • Salt and pepper, to taste
  • 2 tablespoons olive oil or cooking oil of choice
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Heat a large skillet over medium heat and add the olive oil.
  2. Add the diced onion to the skillet. Sauté for about 2-3 minutes until translucent.
  3. Toss in the minced garlic and chopped bell pepper. Stir and continue cooking for about 2 more minutes.
  4. Add the ground turkey, seasoning with salt, pepper, oregano, cumin, and red pepper flakes. Cook until browned, about 5-7 minutes.
  5. Add the diced zucchini to the skillet. Stir well and sauté for about 4-5 minutes until it’s tender yet slightly crisp.
  6. Taste and adjust seasoning as necessary.
  7. Remove from heat and garnish with fresh parsley or basil.

Notes

Serve over rice, quinoa, or leafy greens and pair with a light salad.
