Ingredients

- 1 pound ground turkey
- 2 medium zucchinis, diced
- 1 bell pepper, chopped (any color)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- ½ teaspoon red pepper flakes
- Salt and pepper, to taste
- 2 tablespoons olive oil or cooking oil of choice
- Fresh parsley or basil for garnish (optional)
Instructions
- Heat a large skillet over medium heat and add the olive oil.
- Add the diced onion to the skillet. Sauté for about 2-3 minutes until translucent.
- Toss in the minced garlic and chopped bell pepper. Stir and continue cooking for about 2 more minutes.
- Add the ground turkey, seasoning with salt, pepper, oregano, cumin, and red pepper flakes. Cook until browned, about 5-7 minutes.
- Add the diced zucchini to the skillet. Stir well and sauté for about 4-5 minutes until it’s tender yet slightly crisp.
- Taste and adjust seasoning as necessary.
- Remove from heat and garnish with fresh parsley or basil.
Notes
Serve over rice, quinoa, or leafy greens and pair with a light salad.
