This Healthy Chicken Cauliflower Rice Casserole is creamy, cheesy, and low-carb, combining tender chicken with flavorful vegetables for an easy weeknight meal.


Ingredients

  • 2 cups cooked shredded chicken
  • 4 cups cauliflower rice
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • ½ cup Greek yogurt or cream cheese
  • 1 tbsp olive oil or butter
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: 1 cup diced bell peppers
  • Optional: 2 tsp fresh herbs (parsley, thyme)
  • Optional: ¼ tsp paprika or cayenne

Instructions

  1. Prep cauliflower rice, chicken, onion, garlic, and optional vegetables.
  2. Sauté onions and garlic in olive oil or butter, add cauliflower rice, chicken, yogurt/cream cheese, and seasonings. Stir until creamy.
  3. Transfer to greased casserole dish, top with cheese and optional herbs, bake at 375°F for 20–25 minutes until golden and bubbly. Let rest 5 minutes before serving.

Notes

  • Store leftovers in an airtight container in the fridge for up to 4 days. Freeze for up to 2 months.
