- 2 cups cooked shredded chicken
- 4 cups cauliflower rice
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- ½ cup Greek yogurt or cream cheese
- 1 tbsp olive oil or butter
- ½ tsp salt
- ¼ tsp black pepper
- Optional: 1 cup diced bell peppers
- Optional: 2 tsp fresh herbs (parsley, thyme)
- Optional: ¼ tsp paprika or cayenne
Instructions
- Prep cauliflower rice, chicken, onion, garlic, and optional vegetables.
- Sauté onions and garlic in olive oil or butter, add cauliflower rice, chicken, yogurt/cream cheese, and seasonings. Stir until creamy.
- Transfer to greased casserole dish, top with cheese and optional herbs, bake at 375°F for 20–25 minutes until golden and bubbly. Let rest 5 minutes before serving.
Notes
- Store leftovers in an airtight container in the fridge for up to 4 days. Freeze for up to 2 months.
- Reheat gently with a splash of milk or broth for creaminess.
