- 2 cups cooked chicken breast, diced
- 8 ounces pasta (rotini or penne)
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, chopped
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- Salt and black pepper, to taste
Instructions
- Cook pasta until tender and dice cooked chicken into small pieces. Let cool.
- Mash one avocado and mix with olive oil, lemon juice, salt, and pepper for dressing.
- Combine pasta, chicken, diced avocado, tomatoes, and cucumber. Fold in dressing gently. Chill 15 minutes before serving.
