Ingredients

  • 2 cups cooked chicken breast, diced
  • 8 ounces pasta (rotini or penne)
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • Salt and black pepper, to taste

Instructions

  1. Cook pasta until tender and dice cooked chicken into small pieces. Let cool.
  2. Mash one avocado and mix with olive oil, lemon juice, salt, and pepper for dressing.
  3. Combine pasta, chicken, diced avocado, tomatoes, and cucumber. Fold in dressing gently. Chill 15 minutes before serving.
