- 1 cup almond flour or oat flour
- 1/2 cup nut butter (almond or peanut)
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 2 tbsp coconut oil or melted butter
- 1/3 cup mini chocolate chips or cacao nibs (optional)
- Pinch of salt
Instructions
- Mix almond flour or oat flour with salt in a bowl. In another bowl, combine nut butter, honey, vanilla, and coconut oil until smooth.
- Fold dry ingredients into wet until dough forms. Spread half on parchment-lined tray, sprinkle mix-ins, and layer remaining dough on top.
- Chill in refrigerator for 30 minutes, then cut into squares. Store in an airtight container in the fridge for up to 1 week or freeze for longer.
