Description

Soft, moist, and easy-to-make high protein banana bread. Perfect for breakfast, snacks, or a healthy treat.


Ingredients

  • 3 medium overripe bananas, mashed
  • 2 large eggs
  • 1 cup rolled oats
  • 3/4 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup protein powder
  • 1/2 cup Greek yogurt
  • 1/4 cup maple syrup or honey
  • 1/4 cup melted coconut oil or butter
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Optional: 1/3 cup chopped nuts or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mash bananas in a large bowl. Add eggs, Greek yogurt, melted coconut oil, vanilla, and maple syrup. Mix until smooth.
  3. In a separate bowl, combine flour, oats, protein powder, baking powder, baking soda, and salt. Fold into wet mixture gently.
  4. Pour batter into prepared pan. Fold in optional nuts or chocolate chips.
  5. Bake for 45–55 minutes until a toothpick comes out clean. Cool 15 minutes in pan, then transfer to a wire rack.
  6. Slice and enjoy warm or at room temperature.
