- 3 medium overripe bananas, mashed
- 2 large eggs
- 1 cup rolled oats
- 3/4 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup protein powder
- 1/2 cup Greek yogurt
- 1/4 cup maple syrup or honey
- 1/4 cup melted coconut oil or butter
- 1 tsp vanilla extract
- 1/4 tsp salt
- Optional: 1/3 cup chopped nuts or chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mash bananas in a large bowl. Add eggs, Greek yogurt, melted coconut oil, vanilla, and maple syrup. Mix until smooth.
- In a separate bowl, combine flour, oats, protein powder, baking powder, baking soda, and salt. Fold into wet mixture gently.
- Pour batter into prepared pan. Fold in optional nuts or chocolate chips.
- Bake for 45–55 minutes until a toothpick comes out clean. Cool 15 minutes in pan, then transfer to a wire rack.
- Slice and enjoy warm or at room temperature.
