Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme
  • 2 cloves garlic, minced
  • Optional: grated Parmesan cheese

Instructions

  1. Start by seasoning the chicken breasts. In a small bowl, mix the garlic powder, onion powder, paprika, Cajun seasoning, black pepper, and salt. Rub this spice mix evenly over both sides of the chicken breasts.
  2. Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken breasts. Cook until golden brown on both sides, about 5-7 minutes per side.
  3. Remove the chicken from the skillet and set it aside on a plate. In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant.
  4. Pour in the chicken broth and heavy cream. Stir well, scraping any browned bits off the bottom of the skillet.
  5. Add fresh parsley and thyme. Return the chicken to the skillet, spoon some of the sauce over it, and simmer for about 5-10 minutes until the chicken is cooked through.
  6. If using, stir in the grated Parmesan cheese just before serving.

Notes

For a dairy-free option, replace heavy cream with coconut cream or cashew cream. Serve with zoodles or cauliflower rice for a low-carb alternative.
