Ingredients

  • 1 (5–6 lb) bone-in beef rib roast
  • 2 tbsp kosher salt
  • 1 tbsp black pepper
  • 4 garlic cloves, minced
  • 2 tbsp olive oil or butter
  • 1 tbsp chopped rosemary
  • 1 tbsp chopped thyme
  • 1 tsp onion powder
  • 1 tsp smoked paprika (optional)

Instructions

  1. Preheat oven to 450°F.
  2. Season roast with salt, pepper, garlic, herbs, and oil.
  3. Roast 15–20 min at 450°F, then reduce to 325°F.
  4. Cook until internal temp reaches 120–125°F (medium-rare).
  5. Rest 25 min before carving.
