Ingredients

  • 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons cornstarch
  • 3 tablespoons vegetable oil, divided
  • 2 large bell peppers (mixed colors), sliced
  • 2 cups broccoli florets
  • 1 cup snap peas
  • 5 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1/3 cup honey
  • 1/3 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 3 green onions, sliced
  • 1 tablespoon sesame seeds, for garnish

Instructions

  1. 1. Toss chicken pieces with cornstarch in a bowl until evenly coated. Set aside.
  2. 2. In a small bowl, whisk together honey, soy sauce, rice vinegar, and sesame oil. Set aside.
  3. 3. Heat a large wok or skillet over high heat. Add 1.5 tablespoons oil and heat until shimmering.
  4. 4. Add chicken in a single layer and cook undisturbed for 2 minutes. Flip and cook another 2-3 minutes until golden and just cooked through. Remove to a plate.
  5. 5. Add remaining 1.5 tablespoons oil to the pan. Add broccoli and stir fry for 2 minutes.
  6. 6. Add bell peppers and snap peas, stir frying for another 2-3 minutes until vegetables are crisp-tender.
  7. 7. Reduce heat to medium. Push vegetables to the sides and add garlic and ginger to the center. Cook for 30 seconds until fragrant.
  8. 8. Pour in the honey garlic sauce and let it bubble up. Return chicken to the pan and toss everything together until well coated and heated through, about 1-2 minutes.
  9. 9. Drizzle with sesame oil, then garnish with green onions and sesame seeds. Serve immediately over rice or noodles.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat with a splash of water. You can substitute chicken thighs for breasts, or use shrimp, tofu, or beef instead. Customize vegetables based on what’s available or in season.
