  • 2 medium sweet potatoes, peeled and diced
  • 1/4 cup honey
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground ginger (or 1 tablespoon fresh ginger, grated)
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Start by preheating your oven to 400°F.
  2. Combine honey, soy sauce, minced garlic, ground ginger, black pepper, and a pinch of salt in a small bowl.
  3. Drizzle olive oil in a large skillet over medium-high heat and add the chicken breasts.
  4. Sear for about 4-5 minutes on each side until golden brown.
  5. Pour the honey-garlic mixture over the chicken, reduce heat to medium-low, and cover the skillet.
  6. Let it simmer for about 15 minutes.
  7. Spread the diced sweet potatoes on a baking sheet and drizzle with olive oil and salt.
  8. Roast for 20-25 minutes, stirring halfway through.
  9. Check the chicken to ensure it’s cooked through, reaching an internal temperature of 165°F.
  10. Plate the dish with chicken on sweet potatoes and drizzle with extra sauce.

Notes

For a healthier meal, consider substituting honey with agave syrup and using lower-sodium soy sauce.
