- 2 medium Honeycrisp apples, sliced
- 4 oz crumbled feta cheese
- 5 cups baby spinach or spring mix
- 1/4 cup red onion, thinly sliced
- 1/3 cup pecans (or walnuts/almonds)
- 1/4 cup dried cranberries
- 3–4 slices chicken or turkey bacon, cooked and crumbled (optional)
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Prepare greens, onions, nuts, and cranberries in a large bowl.
- Slice apples and crumble feta on top.
- Mix olive oil, vinegar, honey, lemon juice, Dijon mustard, salt, and pepper for dressing.
- Drizzle dressing over salad and toss gently just before serving.
