A fresh, zesty salad combining tender chicken, Italian meats, provolone cheese, and tangy peppers with a bold Italian dressing for all the flavors of a classic grinder sandwich.


Ingredients

  • 3 cups cooked chicken breast, diced
  • 4 cups shredded iceberg lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup pepperoncini peppers, sliced
  • 1 cup provolone cheese, diced
  • 1/2 cup salami, diced
  • 1/2 cup black olives, sliced
  • 3/4 cup Italian dressing
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. 1. In a large mixing bowl, combine the shredded lettuce, diced chicken, halved cherry tomatoes, sliced red onion, pepperoncini peppers, black olives, diced provolone cheese, and diced salami.
  2. 2. In a small bowl, whisk together the Italian dressing, red wine vinegar, and dried oregano until well combined.
  3. 3. Pour the dressing mixture over the salad ingredients and toss thoroughly to ensure everything is evenly coated.
