Description

A flavorful and creamy dish of marinated white beans infused with herbs, perfect as a side dish or appetizer.


Ingredients

  • 2 cans (15 oz each) white beans (cannellini or navy beans), drained and rinsed
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup fresh parsley, finely chopped
  • Salt and black pepper, to taste
  • Optional: zest of 1 lemon

Instructions

  1. Start by draining and rinsing the white beans thoroughly in a colander.
  2. Combine the olive oil, red wine vinegar, minced garlic, oregano, and red pepper flakes in a large mixing bowl.
  3. Toss in the beans and gently stir until they’re coated.
  4. Add the chopped parsley and toss with salt and black pepper to taste.
  5. Sprinkle in the lemon zest if using.
  6. Let the beans marinate for at least 30 minutes at room temperature.

Notes

For best flavor, allow to marinate longer if possible.
