A flavorful and creamy dish of marinated white beans infused with herbs, perfect as a side dish or appetizer.
Ingredients

- 2 cans (15 oz each) white beans (cannellini or navy beans), drained and rinsed
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 1/4 cup fresh parsley, finely chopped
- Salt and black pepper, to taste
- Optional: zest of 1 lemon
Instructions
- Start by draining and rinsing the white beans thoroughly in a colander.
- Combine the olive oil, red wine vinegar, minced garlic, oregano, and red pepper flakes in a large mixing bowl.
- Toss in the beans and gently stir until they’re coated.
- Add the chopped parsley and toss with salt and black pepper to taste.
- Sprinkle in the lemon zest if using.
- Let the beans marinate for at least 30 minutes at room temperature.
Notes
For best flavor, allow to marinate longer if possible.
