Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking powder

  • A pinch of salt
  • 1 cup peach jam (or apricot for a twist)
  • Food coloring (yellow and red) for the peach effect, if desired
  • 1 cup finely ground walnuts or almond flour
  • Powdered sugar for dusting
  • 1 teaspoon ground cinnamon (optional)

Instructions

  1. Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and to make cleanup easier.
  2. In a large mixing bowl, cream together the softened butter and sugar until it’s fluffy and pale.
  3. Add in the eggs, one at a time, beating well after each addition. Then, mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet ingredients, mixing until well combined.
  5. Scoop out about a tablespoon of dough and roll it into a ball. Repeat this to form all the cookies, placing them about two inches apart on the prepared baking sheet.
  6. Use your thumb or the back of a spoon to create an indentation in the center of each cookie. Fill these indents with a generous teaspoon of peach jam.
  7. Bake the cookies in the preheated oven for about 15-20 minutes, or until they begin to turn golden around the edges.
  8. Once done, remove the cookies from the oven and let them cool on a wire rack.
  9. In a small bowl, mix the ground walnuts or almond flour with powdered sugar and cinnamon. Dust the cooled cookies with this mixture.
