Description

A delicious twist on the classic Reuben sandwich, served in a bowl for a satisfying low-carb meal.


Ingredients

  • 1 cup shredded cooked corned beef (or turkey/chicken alternative)
  • 1/2 cup sauerkraut, drained
  • 1/2 cup shredded Swiss cheese (or dairy-free cheese)
  • 1/4 cup sugar-free Thousand Island dressing
  • 1 tablespoon mayonnaise
  • Optional: chopped green onions or fresh parsley for garnish

Instructions

  1. Heat a medium skillet over medium heat and warm the corned beef.
  2. Drain the sauerkraut if necessary.
  3. Add the sauerkraut to the skillet, reduce heat to low, and stir gently for 2 minutes.
  4. Transfer the mixture into a bowl and top with shredded Swiss cheese. Broil for a couple of minutes until melty.
  5. Mix the Thousand Island dressing and mayonnaise in a small bowl, then drizzle over the bowl.
  6. Sprinkle with green onions or parsley before serving.

Notes

For a lighter version, substitute the meat with sautéed mushrooms and use plant-based ingredients for a vegetarian or vegan meal.
