A delicious twist on the classic Reuben sandwich, served in a bowl for a satisfying low-carb meal.
Ingredients

- 1 cup shredded cooked corned beef (or turkey/chicken alternative)
- 1/2 cup sauerkraut, drained
- 1/2 cup shredded Swiss cheese (or dairy-free cheese)
- 1/4 cup sugar-free Thousand Island dressing
- 1 tablespoon mayonnaise
- Optional: chopped green onions or fresh parsley for garnish
Instructions
- Heat a medium skillet over medium heat and warm the corned beef.
- Drain the sauerkraut if necessary.
- Add the sauerkraut to the skillet, reduce heat to low, and stir gently for 2 minutes.
- Transfer the mixture into a bowl and top with shredded Swiss cheese. Broil for a couple of minutes until melty.
- Mix the Thousand Island dressing and mayonnaise in a small bowl, then drizzle over the bowl.
- Sprinkle with green onions or parsley before serving.
Notes
For a lighter version, substitute the meat with sautéed mushrooms and use plant-based ingredients for a vegetarian or vegan meal.
