Description

A hearty, comforting casserole featuring smoky kielbasa sausage, tender potatoes, and melted cheese in a creamy sauce that’s perfect for family dinners.


Ingredients

  • 1 pound kielbasa sausage, sliced
  • 4 large russet potatoes, diced
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 3 tablespoons butter
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. 1. Preheat oven to 375°F and grease a 9×13 inch baking dish with butter or cooking spray.
  2. 2. Dice potatoes into half-inch cubes and place in cold water to prevent browning. Slice kielbasa into quarter-inch rounds.
  3. 3. In a mixing bowl, combine cream of mushroom soup, sour cream, milk, salt, pepper, and paprika until smooth.
  4. 4. Layer half of the diced potatoes in the bottom of the prepared baking dish.
  5. 5. Add half of the sliced kielbasa over the potatoes, followed by half of the diced onions.
  6. 6. Pour half of the soup mixture over the layers and sprinkle with 1 cup of shredded cheddar cheese.
  7. 7. Repeat layers with remaining potatoes, kielbasa, onions, soup mixture, and top with remaining cheese.
  8. 8. Cover tightly with aluminum foil and bake for 45 minutes.
  9. 9. Remove foil and continue baking uncovered for 20-25 minutes until cheese is golden and bubbly.
  10. 10. Let rest for 10 minutes before serving. Garnish with fresh chopped parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Can be frozen for up to 3 months. Reheat covered in a 350°F oven for best results. Great for meal prep and potlucks.
