A hearty, comforting casserole featuring smoky kielbasa sausage, tender potatoes, and melted cheese in a creamy sauce that’s perfect for family dinners.

- 1 pound kielbasa sausage, sliced
- 4 large russet potatoes, diced
- 2 cups shredded cheddar cheese
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup sour cream
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 3 tablespoons butter
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 tablespoons fresh parsley, chopped
Instructions
- 1. Preheat oven to 375°F and grease a 9×13 inch baking dish with butter or cooking spray.
- 2. Dice potatoes into half-inch cubes and place in cold water to prevent browning. Slice kielbasa into quarter-inch rounds.
- 3. In a mixing bowl, combine cream of mushroom soup, sour cream, milk, salt, pepper, and paprika until smooth.
- 4. Layer half of the diced potatoes in the bottom of the prepared baking dish.
- 5. Add half of the sliced kielbasa over the potatoes, followed by half of the diced onions.
- 6. Pour half of the soup mixture over the layers and sprinkle with 1 cup of shredded cheddar cheese.
- 7. Repeat layers with remaining potatoes, kielbasa, onions, soup mixture, and top with remaining cheese.
- 8. Cover tightly with aluminum foil and bake for 45 minutes.
- 9. Remove foil and continue baking uncovered for 20-25 minutes until cheese is golden and bubbly.
- 10. Let rest for 10 minutes before serving. Garnish with fresh chopped parsley.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. Can be frozen for up to 3 months. Reheat covered in a 350°F oven for best results. Great for meal prep and potlucks.
