Description

A moist and tender loaf cake bursting with fresh blueberries and bright lemon flavor, made extra delicious with Greek yogurt for the perfect crumb.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup plain Greek yogurt
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 2 tablespoons fresh lemon zest
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or frozen blueberries
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons lemon juice (for glaze)

Instructions

  1. 1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
  2. 2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt until well combined.
  3. 3. In another bowl, whisk together Greek yogurt, eggs, vegetable oil, lemon zest, lemon juice, and vanilla extract until smooth.
  4. 4. Pour wet ingredients into dry ingredients and gently fold together until just combined with a few flour streaks remaining.
  5. 5. If using frozen blueberries, toss them in 1 tablespoon of flour. Gently fold blueberries into batter with just a few strokes.
  6. 6. Pour batter into prepared loaf pan and smooth the top. Press a few reserved blueberries on top for decoration.
  7. 7. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out with just a few moist crumbs.
  8. 8. Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
  9. 9. For glaze, whisk together powdered sugar and 2 tablespoons lemon juice until smooth. Drizzle over cooled loaf.
  10. 10. Allow glaze to set for 20 minutes before slicing and serving.

Notes

Store wrapped loaf at room temperature for up to 3 days, refrigerate for up to 1 week, or freeze individual slices for up to 3 months. If using frozen blueberries, do not thaw before adding to batter.
