Description

Soft, buttery snowball cookies filled with tangy lemon cream. Perfect for gifting, parties, or a sweet treat anytime.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 cup lemon cream filling (see recipe notes)
  • Extra powdered sugar for rolling

Instructions

  1. Preheat oven to 350°F (175°C). Mix butter, sugar, vanilla, flour, and salt until smooth.
  2. Roll dough into 1-inch balls and bake for 12–15 minutes until lightly golden.
  3. Let cool completely, cut or scoop lemon cream filling, sandwich cookies, and roll in powdered sugar.

  • Lemon cream can be homemade or store-bought.
  • Cookies can be stored in an airtight container up to 5 days or frozen for up to 2 months.
