Delicious Lemon Crumb Bars featuring a buttery crust and a refreshingly tangy lemon filling.

- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1/4 teaspoon salt
- 1/2 cup rolled oats
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup freshly squeezed lemon juice (about 2 lemons)
- 1 tablespoon lemon zest (from 1 lemon)
- 1/4 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C) and line an 8-inch square baking dish with parchment paper.
- Combine the flour, powdered sugar, and salt in a medium bowl. Mix in the softened butter until the mixture resembles coarse crumbs.
- Stir in the rolled oats until just combined. Press two-thirds into the bottom of the prepared baking dish.
- Mix together the granulated sugar, eggs, lemon juice, lemon zest, and baking powder in another bowl. Whisk until well combined.
- Pour the lemon filling over the crust in the baking dish. Sprinkle the reserved crumb mixture evenly on top.
- Bake in the preheated oven for about 25 to 30 minutes until the top is lightly golden.
- Allow to cool in the pan before lifting out using the parchment paper and cut into squares.
Notes
For a gluten-free option, substitute almond flour for all-purpose flour. Use coconut oil for a dairy-free alternative.
