Description

Delicious Lemon Crumb Bars featuring a buttery crust and a refreshingly tangy lemon filling.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest (from 1 lemon)
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8-inch square baking dish with parchment paper.
  2. Combine the flour, powdered sugar, and salt in a medium bowl. Mix in the softened butter until the mixture resembles coarse crumbs.
  3. Stir in the rolled oats until just combined. Press two-thirds into the bottom of the prepared baking dish.
  4. Mix together the granulated sugar, eggs, lemon juice, lemon zest, and baking powder in another bowl. Whisk until well combined.
  5. Pour the lemon filling over the crust in the baking dish. Sprinkle the reserved crumb mixture evenly on top.
  6. Bake in the preheated oven for about 25 to 30 minutes until the top is lightly golden.
  7. Allow to cool in the pan before lifting out using the parchment paper and cut into squares.

Notes

For a gluten-free option, substitute almond flour for all-purpose flour. Use coconut oil for a dairy-free alternative.
