A refreshing Lemon Sorbet that’s easy to make and perfect for cooling down on a hot day.
Ingredients

- 1 cup freshly squeezed lemon juice (approximately 4–6 lemons)
- 1 cup granulated sugar
- 1 cup water
- Zest of 2 lemons
- A pinch of salt
- Optional: fresh mint leaves for garnish
Instructions
- Prepare the Simple Syrup: In a medium saucepan, combine the water and sugar. Over medium heat, stir until the sugar completely dissolves. Remove from heat and allow to cool.
- Mix the Lemon Juice: In a large bowl, combine the freshly squeezed lemon juice, lemon zest, and a pinch of salt. Stir in the cooled simple syrup until well mixed.
- Chill the Mixture: Cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate for at least 2 hours.
- Churn the Sorbet: If using an ice cream maker, pour the chilled mixture in and churn according to the manufacturer’s instructions, approximately 20-25 minutes.
- Freeze Until Firm: Transfer the churned sorbet to a freezer-safe container, smooth the top, cover tightly, and freeze for at least 2 more hours.
- Serve and Enjoy: Scoop the sorbet into bowls or dessert glasses. Garnish with fresh mint leaves, if desired.
Notes
To make it vegan, ensure no dairy products are used. For a lower sugar option, substitute with agave nectar or a sugar-free sweetener.
