Ingredients

  • 8 oz pasta (fettuccine or penne)
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup low-fat milk
  • 1 tbsp cornstarch
  • ½ cup grated Parmesan cheese
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. Season chicken with salt and pepper. Heat olive oil in a pan over medium heat and cook chicken until golden and fully cooked. Let rest before slicing.
  2. In the same pan, add garlic and sauté briefly. Stir in chicken broth and milk, whisking in cornstarch to thicken. Gradually add Parmesan cheese until creamy.
  3. Cook pasta until al dente. Combine sliced chicken and pasta with the sauce, tossing gently. Add reserved pasta water if needed to reach desired consistency.
