- 2 cups cooked chicken breast, diced
- 1 cup cottage cheese (full-fat)
- 4 oz cream cheese, softened
- 6 strips beef bacon, cooked and crumbled
- 2 medium fresh jalapenos, diced
- 1 cup cheddar cheese, shredded
- 3 stalks green onions, chopped
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp ranch seasoning (optional)
Instructions
- 1. In a large mixing bowl, combine cottage cheese and softened cream cheese, mashing together until relatively smooth with a fork or potato masher.
- 2. Add garlic powder, onion powder, salt, black pepper, and ranch seasoning (if using) to the cheese mixture and stir until well combined.
- 3. Fold in the diced chicken, ensuring each piece is coated with the creamy mixture.
- 4. Add crumbled beef bacon, diced jalapenos, shredded cheddar cheese, and chopped green onions to the bowl.
- 5. Gently fold all ingredients together until evenly distributed, being careful not to mash the components.
- 6. Taste and adjust seasonings as needed.
- 7. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
- 8. Serve in lettuce cups, with vegetable sticks, or enjoy on its own.
Notes
Store in an airtight container in the refrigerator for up to 4 days. For milder heat, remove seeds and membranes from jalapenos. The flavors improve after sitting for a few hours. Can be portioned into individual containers for meal prep.
