A deliciously sweet, low-carb, and sugar-free peach jam that’s easy to make.
Ingredients

- 4 cups fresh peaches, peeled, pitted, and diced (about 6 medium peaches)
- 1 cup low-carb sweetener (erythritol or monk fruit)
- 1/4 cup water
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon vanilla extract (optional)
- 1 tablespoon lemon zest (optional)
- Pinch of salt
Instructions
- Start by washing the peaches thoroughly. Peel them, remove the pits, and dice them into small pieces.
- In a medium saucepan, combine the diced peaches, water, and low-carb sweetener.
- Place the saucepan over medium heat and bring the mixture to a gentle boil.
- After about 10 minutes of simmering, take a fork or a potato masher and mash the peaches slightly.
- Now, add in the lemon juice and zest for that zesty kick.
- Let the jam continue to simmer for another 15 minutes.
- Once done, remove the saucepan from heat and let the jam cool to room temperature.
- Transfer the cooled jam into sterilized jars and store it in the refrigerator.
Notes
For a vegan option, use plant-based sweeteners. Consider adding spices for a unique flavor profile.
